Fallout 3 has slow-mo kills, good explosions with the mines, but pretty unsatisfying sniping.
The obvious answer to your query though is Mercs 2. Rent it, but definitely try it out with her.
OK, my wife likes to watch me play games like Crackdown or CoD4 on the 360, where there are big explosions or people getting sniped. She likes rocket launchers and sniper rifles. That's her thing. So what game should I get/rent to satisfy her? I've already completed CoD4 and have Crackdown, if that isn't obvious. Right now, I have Bad Company, which she likes. She also liked Half-Life2 and she LOVED FEAR (Because of the slow-mo kills). I haven't played any other slow-mo games at all. FEAR is the only one.
I was thinking maybe Saint's Row 2? I haven't played the first one, either. Would Farcry2 be good for this?

Well if she just likes watching gratuitous violence, Fallout 3 has plenty and a fantastic game behind it to boot. Not sure how long it takes to get to explosive payloads like missiles and mini-nukes, though, since I'm not playing a character with great explosives orientation right now.
In terms of blowing stuff up, you ought to try Mercs 2 or Hulk: Ultimate Destruction. Hulk doesn't have sniper rifles, but you run around cities and destroy everything. You can kill a cop, then throw that cop at another cop. And then throw THAT cop at a bus, then pick up the bus and throw it at a helicopter!
Farcry 2 no good for slow-motion, but for explosions and action, can't be beaten! Also keep an eye out for secondaries if you let off a grenade near an ammo dump.
The game is also full of little touches, such as the aforementioned secondary explosions for example, last night I actually saw one of the enemies jump out of a car when I had him trapped and start pushing it round to give him better cover!
Apart from echoing the Mercs 2 suggestion (though I haven't played it, it sounds like a perfect fit for this), I'd just like to say that the truncated version of this topic visible at the forum index is pure excellence.
Fallout 3 + Blood Mess Perk = Explosion-like effects even with regular weapons.
Lost Planet... big big big Splosions...
Saints Row 2 has lots of satisfying blowing stuff up, plus it's a fantastic game.
For satisfying sniping, one of the most satisfying games I've played in the past year is Timeshift. They have several sniping weapons, but the most satisfying is the crossbow. The story and atmosphere are very run-of-the-mill, but the slow-motion action as well as the sniping are just so satisfying, I think you'll both enjoy that experience.
If Mercenaries 2 is anything like the first one, there'll be explosions aplenty, ranging from merely big to gargantuan. But I've not taken it for a spin, so I can't say for certain.
Mercs 2 has delightful explosions, especially when you knock down a building or blow up a cluster of fuel tanks (the rail-car sized ones).
Far Cry 2 is also very splodey, but it stands out in my mind more for snipery goodness. If you start sniping an enemy village (which would be all of them) and they make the mistake of hiding near their own ammo/fuel piles, you can shoot those and watch their own ammo cook off and kill them. Good times.
Hitman Blood Money is almost explode-less, but it has some missions that are very sniper friendly. However, the game is more about the approach/escape than the kills, so you might spend 20 minutes on a mission just to fire 1 bullet.
Crysis Warhead is easily the king of explosions, but that's PC only.
Far Cry 2 definitely has spectacular explosions but I enjoy it more for the fire! Let's just say, junkyard mission + oil spills + flamethrower = more fun than should be legally allowed.
When I hit Qt3 today, this thread was the newest in the gaming forum, and the subject was shown on the main forums index as "My wife wants me to blow...". I immediately checked out this thread, terribly curious as to the recipient of said extramarital homosexual fellatio, but was sadly disappointed.
Hahaha. I was about to post the exact same thing.
Fallout 3, shoot a car, watch the mini mushroom cloud ensue. Shoot a car next to a bunch of other cars, priceless.
Someone's been ignoring the YouTube thread.
Fallout 3: 40 Frag Mines on Tour.
I really thought this was going to be a inflatable beach toy complaint.
